Colourful Chia Coconut Blissfood Balls

Full of nutritious superfoods and with no added sugar, these make a sustaining snack for work or school lunches. Give them a try! They are super easy to put together, and you can experiment with your own additions or replacements - just taste the mixture to ensure you get it how you like it.

Rich in protein and healthy fats from Chia and Coconut, and good sustaining energy, these make a great pick-me-up snack. You can substitute or leave out certain ingredients - feel free to experiment! Try adding your own favourite flavours to the basic mixture as you desire.

Blissfood Balls

 

Ingredients:

  • 4 Tablespoons (approx) Coconut Oil (to melt)           
  • 1/2 cup Coconut Flakes
  • Superfood Bliss Balls1/2 cup Chia Seeds
  • 1/3 cup Amazonia Raw Paleo Protein (vanilla lucuma)
  • 1/4 cup Amazonia Raw Energy 
  • 1/4 cup Maca Root Powder (optional - otherwise add more Amazonia Raw Energy)
  • 1/2 cup Berries (fresh or pre-frozen & defrosted) - chopped
  • Zest of 1/2 fresh lemon
  • Juice of 2 fresh lemons - approx 1/2 cup
  • Extra water/ rice milk as needed to combine to a delicious texture.

Method:

Melt the coconut oil in a saucepan. 

Sieve the powders into the saucepan together with the other dry ingredients and chop the berries and add, along with the lemon zest, fresh lemon juice, and combine well with a spon.

Once combined, taste the mixture and if the mixture is still a little dry, add water or rice milk (or additional lemon juice).

If it's just not sweet enough for your palate, add a little maple syrup or honey - but better for your energy without!Amazonia Raw Energy

This part is a bit messy: form into balls by squeezing together using your finger tips and then rolling between your palms. Then roll in your coatings.

If it's a hot day, refrigerate to set.  Keep in an airtight container in the fridge for up to 5 days if they last that long!
